But the data of the third party interface will change over time. for example ( Between 1:00 and 2:00, every minute )。 I want to record the data returned from the HTTP interface within one hour. And then provide our own business for replay testing and debugging. What is the solution?

It's kind of like a crawler. You can use js to write an Ajax polling, polling once every other period of time, and save the results. Consider using node.
